RHOT 164 Food and Beverage Cost Controls

RHOT 164 Food And Beverage Cost Controls introduces the student to the concepts involved in a food and beverage cost control program that would benefit any food and beverage operation. The students will learn and be able to explain income statements including revenues, expenses, and profit. Purchasing & receiving, recipe costing, yielding, menu engineering, labour cost, and beverage costings will also figure prominently during the delivery of this course.

Learning Outcomes

Upon successful completion of this course, the learner will be able to:

  1. explain revenue, expense, and profit in a food and beverage income statement including the cost/benefit ratio.
  2. explain the process in control systems to achieve acceptable profit levels.
  3. describe purchasing and receiving procedures to control food and beverage costs.
  4. explain inventory management and security measures required to safeguard the operations assets and inventory.
  5. calculate recipes and determine yields and yield factors.
  6. complete a menu engineering workbook and graph.
  7. create and explain labour cost controls.
