PGHM 270: Convention, Sales and Catering Services. The amount of special event, convention and meeting business that exists today is a large part of the tourism and hospitality industry. This course provides insight into the scope and various segments and shows the relationship between professional service and operational success. You will learn how to sell and service the convention/banquet business to ensure successful events/special events.

Learning Outcomes

Upon successful completion of this course, the learner will be able to:

  1. explain the basic concepts and techniques involved in selling and servicing a convention at a hotel/resort property;
  2. demonstrate how to coordinate the different departments in a hotel/resort to bestservice a function;
  3. utilize the Group Resume, Banquet Event orders, functions sheets and other tools used by Catering departments;
  4. utilize Meetingmatrix software to diagram different room set ups;
  5. analyze the appropriate type of food and beverage service for the various types of functions;
  6. explain the various audio visual products through group presentation and peer assessment;
  7. understand market segments and the sales forecast;
  8. Explain the basics of how to plan a special event or meeting;
  9. understand how to do a personal sales call; and
  10. Explain the job duties and responsibilities of the special event planner, meeting planner, hotel convention manager and hotel sales manager.
